Today I’m sharing a recipe from a former blogger and a sweet foodie friend. Ann has recently decided to shut down her very popular, healthy living focused blog to spend more time with her dear husband. She has graciously accepted my request to come out of retirement briefly to guest post…and I’m so grateful to her and now must introduce you all to my lovely friend, Ann.
Hi Everyone! My name is Ann, formerly of Cooking Healthy For Me.
I’m SO excited that Liz asked if I was willing to do a guest post while
she was away….have a GREAT time, Liz! I’m going to infect your
baking blog with a **gasp** SALAD!
I was in the mood for a BLT sandwich….I had the bacon, I had the
Lettuce and I even had the tomato. What I DIDN’T have was sliced
bread. I had a lovely demi-baguette and thought of making a Panini,
but a salad popped into my head!
This doesn’t have any exact measurements to it (measure, measure,
measure when you bake, tho!). I made delicious croutons with the
baguette and made a salad with the BLT ingredients…it was delish!
BLT Salad
Ingredients
1 demi baguette cut into 1-inch cubes
olive oil for drizzling (I used about a Tablespoon)
salt and pepper
6 slices turkey bacon, cooked and crumbled
½ pint grape tomatoes, cut in half
1 avocado, peeled, seeded and sliced
6-8 cups lettuce, torn
Directions
Preheat oven to 350. Drizzle olive oil over baguette pieces and
sprinkle with salt and pepper. Place, in one layer, on a baking sheet
and bake until they are golden brown and crunch. Set aside to cool.
Meanwhile take the lettuce, tomato, avocado and bacon and divide
into two glass bowls. Top with cooled croutons.
Top with your favorite dressing. I thought of using ranch – since
BLT’s have mayonnaise, but instead I used a simple vinaigrette and it
was PERFECT with it!
