My family is not big on nuts (who am I kidding, this is another food category they boycott), but they are huge fans of cinnamon rolls. So I felt compelled to tweak these by eliminating the nuts so I wouldn’t have to eat the dozen plus two all by myself. I also doubled the cinnamon sugar filling to compensate for my omission.
These buns were made from a brioche dough, which involved the laminating process of incorporating extra butter into an already butter laden dough. This made for extra flaky buns…more like a croissants than your typical yeast roll. Can you see all the extra layers in these extraordinary treats? 5 sticks of butter in 14 rolls…you do the math. They were insanely delicious.
