Today’s French Fridays with Dorie recipe is a simple dip…simple, that is, if you can find Fromage Blanc, a yogurt-like cow’s milk cheese. It took me 3 stops, but I finally located it at our Fresh Market. You also can substitute ricotta as mentioned in the recipe. Garlic, parsley, chives and tarragon are added to this cheese along with a bit of olive oil, red wine vinegar as well as salt and pepper. The taste is somewhat like an herbed Boursin spread…and can be used as a veggie dip or, as Dorie suggested, to fill small tomatoes. I decided to use it for my favorite asparagus appetizer…and smeared a bit on slices of prosciutto and wrapped these around some blanched spears.
I wasn’t particularly enamored by the flavor of this spread, so I don’t think I’d use it as a dip. It was, however, fabulous with the asparagus…and was easier to work with than Boursin. This recipe can be found in Dorie Greenspan’s Around My French Table.
