Today’s Baking with Julia is hosted by Truc, of Treats, and Michelle, of The Beauty of Life. This lovely lemon cake recipe can be found on either of their blogs. After a whirlwind of baking for a bridal shower this weekend, the last thing I needed was another dessert in the house. But my brother-in-law and sister-in-law were making a rare overnight stop, and I couldn’t offer dinner without a dessert…I do have a reputation to keep! Plus I’m a sucker for pound cake…and both Bill and Katie have a fondness for lemon desserts.
As the cookbook states, this cake isn’t prepared like a typical pound cake…but more like a genoise. The eggs and sugar are whisked together, then the dry ingredients are sifted into the eggs and mixed just till combined. Cream is incorporated, then finally the melted butter. Our company found this extremely tasty…especially served with a nice dollop of sweetened whipped cream and juicy, ripe strawberry slices. This loaf is not overly lemony so a bit of lemon juice or a lemon glaze might be a nice addition. So quick to whip up…there’s no excuse not to have dessert!
