Oh, boy, the dreaded lentils were up for this week’s French Fridays with Dorie recipe. I was pleased with a meatless meal for a Friday of Lent, but had to work a little hocus pocus on this recipe to make it palatable for the whole family. I made the lentils for me, cooked in chicken broth with onions, celery, carrots, a clove and a bay leaf. A similar dish using Israeli cous cous was more in tune with the rest of the family’s preferences…apparently “dark and earthy” is not a necessarily a good thing! The salmon was just lightly oiled and seasoned with salt and pepper before roasting in a hot oven. I used my favorite Dish D’Lish French seasoning with a generous hand.
This splendid dish was not only flavorful, but healthy. The omega 3 fatty acids in the salmon have been proven to be beneficial to both brain and heart health….and lentils are chock full of iron, folate and fiber. And I enjoyed it immensely, but will save a second go round for a night I am home alone for dinner.

This is my favorite way to eat salmon, and you’re right, it’s the healthiest meal you can imagine. I used black lentils last time and they were delicious…chicken stock is the key!

I had to laugh when I saw this post because it evokes memories of one of the more awful culinary disasters of my career. I made a salmon and lentil dish at my mom’s house that totally bombed. Yours looks like it turned out much better!

Lentils always get crappy remarks … poor things. They really can taste super good cooked the right way … altho they may not be the prettiest looking things after they’re cooked
but your’s turned out real nice and colorful. Nuff said … what time’s dinner? I’ll help you finish that off … leftovers aren’t good for you.
We are big lentil fans around here, and this is just my sort of dish. I wish it had been posted earlier, I totally would have been back on the Dorie train!! Oh well, next week … glad you enjoyed this! : )

It looks and sound delicious and you have roasted the salmon to perfection. I can never have enough of salmon and am always on the lookout for different recipes to prepare it. This looks like a flavourful and healthy way to prepare the salmon – will definitely give it a try.

Our families are similar in this area. I love lentils and can eat them in any form. The others, not so much. I think your dish looks absolutely fantastic (as usual).

We too love salmons Lizzy but this pairing you did is a new discovery. Sure I use plenty of lentils at home and next round, this will a great recipe for me to try. My hubby simply loves salmons and am going to make this for him. I will just help myself to the lentils and maybe some toasted bread.

Lentils are great, don’t know why they are out of favour my many persons. Maybe if they triple the price it will seem more luxurious and people will start loving it

And you are right about all the healthyness in this dish…I’ve felt healthy all day just thinking about it. So good when a new idea, salmon and lentils together, turns out so well. You are nice to make your family an option they like.
I am really going to have to get that book. There is a restaurant in Boston called Beacon Hill Bistro that does a phenomenal salmon with lentils and celeriac. Great recipe!

I love lentils and salmon if I can get it fresh – I’ve seen this pairing before, but I’ve just never tried it. Your salmon looks incredible. And for the lentils, you might try adding a splash of vinegar (red wine vinegar might go well). I think it helps cut the chalkiness of the lentils and brightens up their flavor…
