It only took a glance at the photo in Around My French Table to sell me on this stunning salad. Ruby red grapefruit are one of my favorite winter snacks…the perfect balance of sweet and tart. Segments of this juicy citrus were diced and combined with cucumber, bell pepper, jalapeño, sliced scallions and lump crabmeat. A dressing of olive oil, grapefruit juice, minced mint plus a squeeze of lemon and a shake of Tabasco was light and complementary. It hit a record 80º today…way above the average around here for mid-March…and this amazing salad was cool and utterly refreshing….with the perfect amount of zing from the peppers. mmmm, this would have been perfect today…such warm weather here! I have some lump crab I would like to use….I think I have everything but the cucumber on hand (I know, who runs out of cucumbers….we eat them so much and I need to make another run to the store to stock up….where’s my stunt double when I need her???)

I think you found the perfect glasses for serving this dish. Gorgeous presentation. I am a grapefruit lover too, and before this week’s recipe I had not idea that I was in the minority in this regard. Wish I could say that I loved this salad more than I did, but it just wasn’t to be.
