Crab and Grapefruit Salad…French Fridays with Dorie~

It only took a glance at the photo in Around My French Table to sell me on this stunning salad.  Ruby red grapefruit are one of my favorite winter snacks…the perfect balance of sweet and tart. Segments of this juicy citrus were diced and combined with cucumber, bell pepper, jalapeño, sliced scallions and lump crabmeat.  A dressing of olive oil, grapefruit juice, minced mint plus a squeeze of lemon and a shake of Tabasco was light and complementary.  It hit a record 80º today…way above the average around here for mid-March…and this amazing salad was cool and utterly refreshing….with the perfect amount of zing from the peppers.  Thanks, Dorie, for another winner!

mmmm, this would have been perfect today…such warm weather here! I have some lump crab I would like to use….I think I have everything but the cucumber on hand (I know, who runs out of cucumbers….we eat them so much and I need to make another run to the store to stock up….where’s my stunt double when I need her???)

I think you found the perfect glasses for serving this dish. Gorgeous presentation. I am a grapefruit lover too, and before this week’s recipe I had not idea that I was in the minority in this regard. Wish I could say that I loved this salad more than I did, but it just wasn’t to be.

I had fresh crab ceviche a few weeks ago and it’s all I can think about now! This dish looks similar and makes me want to jump in the car and go find some crab!! Yum!

I’ve been amazed at how beautiful the weather has been and it really has put me in the mood for refreshing salads and seafood. Somehow, seafood always sounds more appealing in the summer to me. And I love the addition of grapefruit…

Welcome back Liz! I know you did enjoy spring break and now Easter is right around the corner. Time does fly! Anyhow, the idea of cold crab and citrus reminds me of the days living in Florida. Those days these type of dishes were for breakfast! Anyhow no doubt it is a winner and you did a fabulous job on the presentation. Enjoy the weekend.
