Cheese Soufflé…French Fridays with Dorie~

Despite the array of dirty dishes and pots in my kitchen after whipping up this soufflé, it was totally worth the dishpan hands due to its absolute deliciousness! Bill ate two helpings and picky Nick thought it was wonderful, too.  A béchamel sauce was made, seasoned with salt, white pepper and some grated nutmeg…along with my own addition of a nice pinch of cayenne.  Egg yolks were stirred in after putting the sauce through a sieve to remove any flour lumps, followed by the addition of a half pound of grated cheese…I used the requisite Gruyère plus some sharp cheddar.  Finally, whipped egg whites were folded in, and the mixture was poured into a buttered soufflé dish dusted with bread crumbs.
My soufflé rose like a dream…but my foil tent during the last 15 minutes of baking time didn’t stay put, so my top over browned a wee bit.  But that cheesy crust was what I coveted….so magnificent and a wonderful contrast to the tender center.  Unfortunately, I was unable to find this recipe online to share, but it is available in Dorie Greenspan’s Around My French Table.

Congrats of the 2 years anniversary Lizzy and you have come up with so many amazing recipes all this time though I have only been in connection I think maybe like 8 months ago.

Yeh to the rising of the soufflé but I have never made this before. However why not to new recipes for it does so good and love that crispy brownies top of the soufflé.

Happy two year anniversary!

When I was younger, my first cookbook was a kid’s souffle cookbook. I remember running around the house frantically and screaming at anyone who so much as made a noise that they would make my souffle fall!

Of course, my souffles never looked this yummy! Delicious Liz!

It’s not the typical souffle fear but just that separating eggs is my least favorite kitchen task so I always end up putting it off and making something else. Congrats on two years! That’s awesome :) I just looked up Around my French Table on Amazon and they have it for sale – and it’s an awwwwesome price. This stunning cheese soufle may have been the deciding factor in how badly I needed that book. I even love that he foil tent didn’t stay in place and it got a little extra golden. Looks perfect to me.
