Cheese Soufflé…French Fridays with Dorie~
Despite the array of dirty dishes and pots in my kitchen after whipping up this soufflé, it was totally worth the dishpan hands due to its absolute deliciousness! Bill ate two helpings and picky Nick thought it was wonderful, too. A béchamel sauce was made, seasoned with salt, white pepper and some grated nutmeg…along with my own addition of a nice pinch of cayenne. Egg yolks were stirred in after putting the sauce through a sieve to remove any flour lumps, followed by the addition of a half pound of grated cheese…I used the requisite Gruyère plus some sharp cheddar. Finally, whipped egg whites were folded in, and the mixture was poured into a buttered soufflé dish dusted with bread crumbs.
My soufflé rose like a dream…but my foil tent during the last 15 minutes of baking time didn’t stay put, so my top over browned a wee bit. But that cheesy crust was what I coveted….so magnificent and a wonderful contrast to the tender center.
