Most of my recipes can be found in binders…printed off the computer over the past 15 years or so. But I have a few treasured note cards in my recipe box…in my mom’s handwriting. This is one of those. It comes out every Lent when a meatless meal is needed. A mixture of cheese, eggs, and bread…it is simple and tasty. Not quite and omelet, not quite a soufflé…but quite delicious.
Cheese Omelet…recipe courtesy of my mom
4 slices of bread
2 tablespoons butter, at room temperature
1 cup milk
1/2 teaspoon salt
A dash of freshly ground black pepper
1 cup grated cheese, I used sharp cheddar
4 egg yolks
4 stiffly beaten egg whites
Butter casserole dish and preheat oven to 325º.
Butter the bread and cut into 1 inch cubes. Put in large bowl and add milk. If bread is dry, more milk may be needed. Sprinkle with salt, pepper and cheese, and gently toss to combine.
Beat egg yolks until light and stir into bread mixture. Fold in beaten egg whites. Put into casserole dish and bake for 30-35 minutes.
Serves 4.

That looks wonderful. Simple and delicious – Lent or not!
Ahhh, how nice that is was your mom’s. That’s one thing about going mostly digital, those tangible treasures from the past are greatly reduced.
Very nice recipe. Not that many ingredients and easy to prepare
It looks delicious. The recipes that I have from my mom are definitely my most precious! I love it when people share their. Many thanks for doing so. Have a great week!

Simplicity brings out great taste such as this cheese omelette. I need this simply recipe during time crisis and need to cook somehow even at that.

Mum’s the word on this one, Liz. So simple and fabulous. This one is for keepers – and it uses 4 egg yolks? I LOVE it!

A Souffelet! You may be on to something here, Lizzy!
I have a great weakness for cheese. This is quite perfect for me
yum, this looks delicious! And those are the best kinds of recipes. I have binders full of things printed out or ripped out of a magazine, but my favorites to look through are the ones that have been passed down in my recipe box

This would make such a delicious breakfast…so eggy and cheesy, yum!
I so love cheese-and-egg based entrees! This is a fun dish–a cross amongst a strata, an omelet and a souffle.
In the age of online recipe binder, I find myself always so drawn to the recipe cards with my Grandmas handwriting on them. And I love this recipe, it looks like an egg souffle, so pretty.
That looks really yummy! No one can beat the easy fix meal for a perfect quick delicious dinner. Super appetizing! Found your blog from Just as Delish
This is a special omelet in more ways than one. I bet its preparation makes this taste great and more importantly, it’s from your mom.
Perfect recipe for dinner tonight…all the ingredients are in my fridge already! Thanks for sharing
perfect for weekend breakfast idea awesome dear,,
Wow, that does look delicious Lizzy – and a great idea for Lent. When it comes to recipes, I really never seem to print them – I have a huge collection of bookmarks in a food folder in my favorite browser and a folder on my computer with recipes – I’d hate to think what would happen if my machine went down =(
One more idea to use bread!!
Great recipe!
This looks like the perfect comfort dish! Perfect for any meal of the day too =)
Very nice meatless meal, and the fact that you have your mother’s handwritten note card makes it special.

Wow! That sounds so delicious right now.
This looks fantastic – perfect comfort food. Why is it that mothers always know best?
I have some of my grandmother’s recipe cards and there are definitely some treasures in there. This one also looks like a treasure. I like that it is prepared in these ramekins instead of the traditionally folded over serving. Perfect for anytime! Thanks for sharing this one.
Lizzy, I love that this is your Mom’s recipe. At the end of the day our mother’s recipes are some of the best in the world!
This looks wonderful!! Have a great week! ~ Ramona

Nice info
I love the “soufflet” idea. This looks delicious! I treasure the recipes both my parents left me. Every time I see their handwriting I smile.
Souffle or omelet, this just looks delish!
May I use your picture on Pinterest?
Thank you!
This looks delicious. Recipes like this are so special. I love your print feature.

You have so many recipes on your blog but you also have many recipes in a binder (could be plural?) and recipe box? Wow, it’s nice that you kept your mom’s recipe handy. My mom didn’t write anything down, so I have to write when I ask her (and she doesn’t measure of course). This one looks very easy to make and I think my kids will love this!
Well if your mom says its an omelet its an omelet. And it looks great. THis is one of those dishes that can be so many things and take so many flavorings or themes. I copied this down but I have a mad desire to add green chills and chopped tomato. Or not. I could eat this whole thing on any given sunday I’m sure. With bacon.
Handwritten recipes from my mom and John’s grandmother are my treasures as well. This looks like such a simple, but delicious recipe.
Lovely…simple and delicious
I have to say I am drooling at this one. I love that it is this odd combination of savory bread pudding, souffle and a hearty omelet. This HAD to be delicious. I have no doubt!
This looks and sound fantastic! I’m going to save this recipe to make for a weekend breakfast
Bobbi, you are certainly welcome to pin this
I’m flattered! Thank you~
Oh my, I can definitely tell I’m going to like it here.
The eggs look so nice and fluffy and the dish sounds delicious. I can see having this during Lent.
Thanks for sharing, Lizzy…
Brilliant Liz!! I’m not a huge fan of omelets but i love that this includes the bread in with the eggs. This is a perfect all in one breakfast. Must try!
This is a gorgeous and delicious looking recipe! Mom’s recipes are so good (not my mom’s – she doesn’t cook! LOL
) I am going to make these soon… Thanks, Lizzy!
This is one tasty looking recipe, Liz. It’s so nice that you saved your Mom’s recipe cards…those meals are always so much more than just food.
This looks simple and delicious; simply delicious. I use binders, too…and still have a few treasured handwritten recipe cards that I really ought to archive in a binder to protect them.
That omelet looks so good and comforting. It also is easy to make! Awesome!
Great recipe. I have the same binder and some of my mother-in-law’s recipe cards too. I can not wait to try this one.
A great twist on the traditional omelet! Love this recipe from your mom!
Sounds like you have a nice mother.
Welly your mom really knew the good eats! This is just delightful!
This looks really good! How many servings do you usually get out of it?
Love the presentation and the yummy crusty look on top.
