I had a Nutella cookie set to post today…but they were nothing extraordinary. And I like present you with a fabulous recipe to start the week. So you may never see those dull devils…but after you take a gander at this amazing ice cream, you should be delighted they were shelved. Ultra chocolaty, silky and decadent…perfect for Valentine’s Day or any day.
“Terrific” was mumbled more than once, but mostly silence as the bowls of glossy, chocolaty goodness were emptied. This one will be made again and again…and I’m thinking it would be a good filling for the few remaining Nutella cookies.
Chocolate Velvet Ice Cream…from Gourmet
6 ounces semisweet or bittersweet chocolate, chopped
1 cup sugar
1/2 cup Dutch processed cocoa
1 1/2 cups heavy cream
1 cup milk
3 egg yolks
In a saucepan, combine sugar and cocoa. Whisk in cream and milk. Bring to a boil, stirring occasionally. Take off heat while preparing the yolks. In a bowl, whisk egg yolks till smooth. Slowly add a thin stream of the hot chocolate mixture to the eggs, whisking constantly so as not to cook the eggs. After a cup or so has been incorporated, add the egg liquid back to the pan and cook, stirring constantly till the liquid reaches a temperature of 170º (mine was there almost immediately). Remove pan from heat and add chopped chocolate, whisking until melted. Pour liquid through a sieve into a clean bowl, cover with plastic and chill for at least 3 hours.
After the custard has chilled, transfer into an electric mixer and beat till thick and fluffy. Freeze ice cream in the ice cream maker. Mixture will still be soft. Place in an airtight container and freeze till firm.

Ice cream is SO difficult to photograph! I tried once, it melted into a soupy mess which I used as creamer in my coffee, called it a wash, and haven’t tried since! This does sound delicious, and chocolate is my favorite.

I wish I had an ice-cream maker… And a bigger freezer… I think I will buy both in the Spring only to enjoy the home-made ice-creams.
Chocolate ice-creams have always been among my favourite ones and these look amazingly rich and soft and chocolatey.
Mmmmm! It’s those egg yolks that make it so velvty!! Can’t wait to try it.
Yum! It’s hard to make ice cream look sophisticated, but your pictures just yell ‘dinner-party dessert’!
Ooohh this looks so delicious! I love a decadent velvetty ice cream. And I also love those moments of silence where everyone is too busy enjoying eating that no one talks! I need to buy an ice cream maker & try this out stat!

Beautiful pictures.

Your chocolate ice cream looks decadent! I hate when it isn’t fake tasting and not rich. This one looks the exact opposite!

I keep trying to explain to my in-laws that real ice cream is not made with whipped topping and skimmed milk. I am totally giving them this recipe!!!!
Wow. I’m stunned speechless – this is really ….wow! Honestly, Liz, I’m at a loss!
This is perfectly simple. Some days there is nothing better than a bowl of chocolate ice cream
Oh Liz….there is no other word to describe how this ice cream looks than LUSH! So creamy..and what a deep chocolate color! Hmm…sprinkle this lusciousness with a few hazelnuts and I can ALMOST forgive you for not posting the nutella cookies! (Hope we see those in the not too distant future!)

Beautiful, Lizzy! I was just thinking that we hadn’t made ice cream in a while. This one looks & sounds amazing.
I’m taking a pass on FFWD this week, but will be posting for Baked Sunday Mornings & the first new TWD recipe!
These are such delectable little treats,Lizzy!Good that they managed to mumble ‘Terrific’ – if it had been me,I would have been unashamedly busy in just polishing off my plate;)Delish creation with chocolate!
Nice! I must haul out the ice cream maker. I’ll bet the Nutella cookies would go well with it..
Oh you’re killing me here! Now I have a serious craving for chocolate ice cream.
How long would you have to freeze them so their a bit more solid? I know Theresa prefers her ice cream a bit firmer.
These photos make me want to lick the screen – although a dose of reality stops me from doing that. Just devine!
Wow what a lovely ice-cream
It looks so smooth and silky
That does indeed look velvety and delicious. We actually made Dorie’s chocolate ice cream for the first time this past summer and were VERY impressed. Maybe it was because I splurged and used the good chocolate in it, but whatever it was, it was delicious!
Delicious chocolate velvet ice cream, looks so yummy n creamy.Well presented too….
Wow! I have to save this recipe for my mother. She would just love this.
This looks so incredibly rich and decadent! I just finally got an ice cream machine for x-mas and I need more recipes for it! Thanks for sharing!
If you have a moment, would you share the ice cream on My Meatless Mondays. Ice cream is the best dessert, especially when this smooth and creamy.
http://sweetsav.blogspot.com/2012/01/my-meatless-mondays-blueberry-crumbless.html
All yout desserts are so amazing and this one is killer. Smooth and creamy and chocolate. I don’t suppose this can be made without the ice cream maker.
This looks like heaven…velvety smooth chocolate ice cream! Yum!
Oh Yum! You’ve just made me crave your chocolate velvet ice cream… before breakfast! Love all that dark chocolate!
I actually save the Gourmet magazine, if I’m not mistaken, from the late eighties, I believe. The magazine had a lot of different flavored ice cream on the cover!
Such a velvety creamy and decadent goodness.
I think you made Top 9 with that, Lizzy…Congratulations! I’m a few days late with the good wishes, but you are always on my top of the list…with or without Top 9, my dear friend!
xoxo
Looks very “gelato-like.” (I can never remember what makes the difference between gelato and plain ole’ ice cream.) I think I might be breaking out the ice cream maker soon. Thanks for posting this to start out the week (even though I am just getting around to it.)
I love that you can actually see how creamy it is in the photos. It is glossy and gorgeous!
Lizzy, Kim and I have decided that we are starting a foodie commune and you are going to come cook for us… things like this…five times a day…
You’re cool with that right?
This looks like just the perfect chocolate dessert!
Just when I think to myself no more chocolate control this pops up – you are making me go crazy for chocolate
Cheers
Choc Chip Uru
Just beautiful from photos to recipe! Yummy! It was about 71 degrees here and this ice-cream would hit the spot! Great job Lizzy! Have a wonderful day!!!
Velvet is the perfect name for this one. You captured every bit of that in the picture. Yum!!
Ooooh my, If that doesn’t look way to rich and creamy! Kidn of like frozen chocolate mousse
I think I’ll have to change my resolve to “gain 60 pounds” and make your recipes eeeevery day and be happy!
Yes yes and more yes to yummilicious ice cream!!
It is nice to see a delicious treat made with so many wholesome ingredients. Thank you for sharing your mouthwatering ice cream with the Hearth and Soul hop.

i was going to say the same thing – stuff that chocolatey goodness in those “mediocre” cookies!
….i’m beginning to think i should maybe get an ice cream maker.
One word: DIVINE!
You left out the chopped chocolate. At what stage do you add it? Or it’s it for folding it at the end?
Thanks for noticing my omission, Marlyn! Thank you. I’ve updated my post. The chocolate is added after the custard reaches 170º…before you pass it through the sieve.
am so scared to make my first ice cream Lizzy. How do you know you’ve reached 170 degree. I don’t have anything to measure it with.
I’d just wait till you see it steaming…since 212º is boiling, you want it below that temp…maybe just a few tiny bubbles around the edges… Hope that helps a bit (I think you want above 160 for egg safety…but not much higher to keep the custard creamy).
