Chocolate Velvet Ice Cream~

I had a Nutella cookie set to post today…but they were nothing extraordinary. And I like present you with a fabulous recipe to start the week. So you may never see those dull devils…but after you take a gander at this amazing ice cream, you should be delighted they were shelved. Ultra chocolaty, silky and decadent…perfect for Valentine’s Day or any day.

“Terrific” was mumbled more than once, but mostly silence as the bowls of glossy, chocolaty goodness were emptied.  This one will be made again and again…and I’m thinking it would be a good filling for the few remaining Nutella cookies.
Chocolate Velvet Ice Cream…from Gourmet
6 ounces semisweet or bittersweet chocolate, chopped
1 cup sugar
1/2 cup Dutch processed cocoa
1 1/2 cups heavy cream
1 cup milk
3 egg yolks
In a saucepan, combine sugar and cocoa. Whisk in cream and milk. Bring to a boil, stirring occasionally. Take off heat while preparing the yolks. In a bowl, whisk egg yolks till smooth. Slowly add a thin stream of the hot chocolate mixture to the eggs, whisking constantly so as not to cook the eggs. After a cup or so has been incorporated, add the egg liquid back to the pan and cook, stirring constantly till the liquid reaches a temperature of 170º (mine was there almost immediately). Remove pan from heat and add chopped chocolate, whisking until melted.  Pour liquid through a sieve into a clean bowl, cover with plastic and chill for at least 3 hours.
After the custard has chilled, transfer into an electric mixer and beat till thick and fluffy. Freeze ice cream in the ice cream maker. Mixture will still be soft. Place in an airtight container and freeze till firm.

“Velvet” is so apt! Looks even better than velvet … what’s velvetier than velvet?
I’ve just made a comment saying I’m not into chocolate ice cream and here you are proving me wrong …. definitely happy to be proven wrong in this case!
I could just drown in that …. gimme, gimme!

Ice cream is SO difficult to photograph! I tried once, it melted into a soupy mess which I used as creamer in my coffee, called it a wash, and haven’t tried since! This does sound delicious, and chocolate is my favorite.

I wish I had an ice-cream maker… And a bigger freezer… I think I will buy both in the Spring only to enjoy the home-made ice-creams.
Chocolate ice-creams have always been among my favourite ones and these look amazingly rich and soft and chocolatey.

Oh Liz….there is no other word to describe how this ice cream looks than LUSH! So creamy..and what a deep chocolate color! Hmm…sprinkle this lusciousness with a few hazelnuts and I can ALMOST forgive you for not posting the nutella cookies! (Hope we see those in the not too distant future!)

That does indeed look velvety and delicious. We actually made Dorie’s chocolate ice cream for the first time this past summer and were VERY impressed. Maybe it was because I splurged and used the good chocolate in it, but whatever it was, it was delicious!

I actually save the Gourmet magazine, if I’m not mistaken, from the late eighties, I believe. The magazine had a lot of different flavored ice cream on the cover!
Such a velvety creamy and decadent goodness.

Thanks for noticing my omission, Marlyn! Thank you. I’ve updated my post. The chocolate is added after the custard reaches 170º…before you pass it through the sieve.

I’d just wait till you see it steaming…since 212º is boiling, you want it below that temp…maybe just a few tiny bubbles around the edges… Hope that helps a bit (I think you want above 160 for egg safety…but not much higher to keep the custard creamy).
