Chocolate Chunk Cookies~

I owned the first Barefoot Contessa cookbook before any of my friends.  It was my secret weapon for entertaining.  Everyone loved my sundried tomato dip…even though it was Ina’s.  Now, thanks to Food TV, my secret is out.  I’m still working my way through all her recipes…and it was time to try the chocolate chunk cookies.

9 out of 10 times, if I ask Bill what he wants for dessert, he’ll say chocolate chip cookies…plain old Nestles Tollhouse cookies.  He’s also become a huge fan of Jacques Torres’ version…which are both huge and delicious…and the reason I ordered a case of Guittard’s Semisweet Chocolate Wafers…I had to recreate them perfectly. This recipe from Barefoot Contessa Parties is right up there with both his favorites.  In fact, when I asked for a comparison, he commented, “Since I’ve eaten thousands of tollhouse cookies, I’m going to have to sample at least a dozen before giving an accurate opinion.”  Then he proceeded to eat a second, mumbling, “These are terrific.”

Chocolate Chunk Cookies…adapted from Ina Garten
2 sticks butter, at room temperature
1 cup brown sugar
1/2 cup sugar
2 teaspoons vanilla
2 eggs
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt

4 cups semisweet chocolate chunks (I used Guittard chocolate wafers)

Preheat oven to 350º.  Line baking sheets with parchment and set aside.

Cream butter, sugar and brown sugar till well combined.  Add eggs, then vanilla and mix well.  Add flour, baking soda and salt and mix till combined.  Stir in chocolate chunks.

Drop by rounded tablespoonfuls onto cookie sheet, about 6 per sheet.  Flatten slightly with moist hand.  Bake 12-15 minutes, till just golden.  Be careful not to over bake.  Cool slightly on pan before moving to cooling rack.

Makes about 36.

These look like the ultimate chocolate chunk cookies! I love big chunks of chocolate in cookies, especially because you can usually get better quality chocolate in a chunk as opposed to a chip. Hope you have a wonderful Wednesday Liz :) !

I do watch her cooking program from time to time Lizzy and yes, some great recipes she comes up with.

Similarly, these cookies with chocs looks so crispy and full of that chocolaty taste. Pass over one for me to taste please.

Your picture does tell me that these are crispy buttery and chock full of chocolate. Those three components are the makings of a winner of a cookie in my book. Delicious!

Chocolate chip is my kids’ favorite too. It’s nice that there are so many versions to try to satisfy the foodie in me…otherwise it would get way too boring making the same old recipe ;-)

Chocolate Chip cookies are my favorite kind of cookie. They just say comfort!! I love them.. and these look amazing!! Okay Lizzy, you’ve made me want to challenge myself. I must make some from scratch one of these days. I hope mine don’t turn into my traditional hockey pucks. :) PS.. I love Ina too. I own her Back to the basic cookbook. :)

My hubby is a huge chocolate chip cookie fan although I don’t really love them all the time. It’s rare that I make them these sound pretty great with the chunks. Maybe I’ll surprise him. :)

I love Barefoot Contessa! These cookies look outstanding. It also sounds like we have similar husbands. Mine could eat chocolate chip cookies (with a side of vanilla ice cream) every day for breakfast lunch and dinner!

Really lovely. I love how thin these are and you can see the chocolate chips. ugh. I want one. I also use BC as a go to cook book. Most of my side dishes during the holidays were straight out of her most recent book, and they were everyone’s favorite. Gotta love the lady.

Oh I hate when a good secret gets out. lol. ;)
I am also still trying to work my way through a lot of my favorite cook books and I totally get it when you say he only asks for Chocolate Chip cookies. My BF would be content with ice cream… every night… from the frozen food section. lol. These little bad boys do look like an awesome way to mix it up.
