Matafan…Fluffy Potato Pancakes

Now this was a family pleasing recipe.  Baked potatoes were riced, combined with eggs, flour and milk, then lightened with some whipped egg whites, and finally the pancake batter was fried in butter. I paired ours with vinaigrette dressed greens and roasted chicken for a lovely weekday dinner. Oh wow. The egg whites make these so light and fluffy and the butter makes them decadent! I am going to save this and make it for my family on Christmas morning.

I am glad I stopped in because I saw another post on this and was wondering why my potato pancakes do not look like this. You did put some clues in this post, so I now have something to go on. Picture perfect-yum!

Not like the potato pancakes my husband makes but boy do they look good, really more like a real ‘breakfast’ type pancake. I’m going to make these next week with the roast, can’t wait-thanks for the preview!

This is the second post i have seen doing potato pancakes and honestly I am a little sad I didn’t think of this as well. So awesome- who doesn’t love a pancake and a potato so the combo is fabulous!
