Flank steak is one of my youngest’s favorite entrees. When he was a toddler and would request “steak” for dinner, I didn’t have to pick up pricey filet mignon…flank steak was his steak of choice. Now he has no qualms about ordering rib eyes, filets or New York strips when we’re dining out…ouch on the pocketbook!
I have a binder for beef recipes that includes at least 10 flank steak marinades, and I just happened to have all these ingredients on hand. It made for a quick, delicious meal…although the charcoal grill (never the griller…haha) cooked the beef beyond his preferred almost mooing rare stage to a nicer pink medium rare…my preference.
Ginger Flank Steak…adapted from Bon Appetit
1/2 cup soy
1/2 cup Mirin
1/4 cup brown sugar
3 tablespoons peeled minced ginger
1 tablespoon balsamic vinegar
4 cloves garlic, crushed
1-2 flank steaks
Combine the first six ingredients in a gallon ziplock back and mix well. Add flank steaks and allow to marinate at least 2 hours and up to one day.
Grill to desired doneness. Let rest 10 minutes under foil. Cut across the grain to serve.

I wish I was as organized as you to have a binder! I’m lucky my piles are neat! I love flank steak, too. I grew up as the family cook and flank steak was one easy meal to prepare. We just didn’t have fresh ginger or — heaven forbid! mirin — back then. This would have made me a hit. I’m saving it in my pile.
I’m going to look for the mirin…. this dish is inviting me!!!

Lizzy..this dish is very inviting, especially for my husband who loves any kind of steak. I’ll have to search the stores for mirin and make this for him.He likes his steaks to be marinated.

Delicious and simple! I love beef marinades, especially since you can still use them with pretty much any cut of meat! I tend to go super cheap and marinate london broil steaks, but I do love me some flank steak!!

Yum – that looks perfect to me! We do a similar marinade for beef tips on the grill – I love the balsamic vinegar in this one!

I swear I never see flank steak here in Canada. Not sure why. Kind of weird. I always see people use it and talk about it. But I can never actually find it. I must look into this. Maybe our cows are flankless, who knows. Lol. This is super yummy. I am a total steak chick as is mini-me. Gonna have to try this out.

LOL, Claudia…we had pot roast last week and he was griping about it. Thank goodness hubby and I both love it…I’m sure Nick will like it so much more after a year of dorm food when he’s off to college next year!

My kinda dinner! LOVE IT!
I see so many recipes for flank steak but have trouble finding it at my local markets (or when I do find it – its almost comparable in price to rib eye!). Is there an appropriate substitute or should I just spend a little more from time to time and pick one up?
Kita, you’re not the only one having trouble finding flank steaks…especially at a decent price. They used to be quite reasonable until they gained popularity…but they shouldn’t be as costly as a rib eye..yikes.
Here are some other names to look for:
Bavette (French)
Flank Steak Fillet
Jiffy Steak
London Broil
If you can find a market that consistently carries these, you might just watch for a sale. Hope you can find a deal one of these days~
