Chicken with Artichokes and Israeli Couscous~

I spotted this recipe in one of the earliest issues of Everyday Food magazine. I was so enamored by the look of the Israeli couscous that I scoured the city for some to no avail.   I resorted to a mail order source, but now can find it easily in some of the higher end grocery stores. Israeli couscous is actually little pearls of pasta…and I find it closer to the texture of orzo than standard couscous. It is truly worth the hunt to have a stash in your pantry.  And this quick recipe is one of my favorite ways to showcase this delicious pasta.

Chicken with Artichokes and Israeli Couscous…adapted from Everyday Food

6 boneless skinless chicken breasts
Kosher salt and pepper
1/4 cup flour
1/4 cup sun-dried tomatoes packed in oil, drained and sliced into strips
1/4 cup olive oil
1 can artichoke hearts packed in water, drained and halved
A bunch of scallions, thinly sliced
4 garlic cloves, minced or sliced thinly
1 cup chicken broth

1 cup Israeli couscous

2 cups chicken broth

Place chicken in a large ziplock bag and flatten with a meat mallet to about 1/2 inch thickness.

In a large skillet, heat 2 tablespoons of olive oil.  Season chicken with salt and pepper and coat with flour, shaking off any excess.  Saute till lightly browned on each side and cooked through.  Remove.
 

Add the remaining olive oil.  Add garlic and sauté briefly.  Add white parts of scallions, then the 1 cup of chicken broth.  Stir and cook, bringing up browned bits from the bottom of the pan.  Add artichokes and sun-dried tomatoes.  Cook until artichokes are hot and sauce has thickened slightly. Check seasonings and add more salt and pepper if necessary.

To make couscous, bring the 2 cups of chicken broth to a boil.  Add couscous.  Boil till couscous is tender, about 10 minutes.  Drain.

Serve chicken on top of couscous, and spoon sauce over chicken.  Garnish with the green part of the scallions if desired.

Artichokes are so difficult to come by here Lizzy though I have watched this ingredients being used on TV.

I like the way you have prepared the chicken with all the ingredients added inside.

I have to admit I never had artichokes on the meal like that,I think I have on dipping sauce,but that sound good with chicken and couscous,Great healty dinner recipe.

I love a meal like this that you can practically make out of the pantry. Great for busy days. Chicken and artichokes together is a great combination. (I wish I could find frozen artichokes!)

What a nice well rounded meal to grace the table with! I have recently got hooked on cous cous and artichokes are something I have not tried yet. Your pictures do inspire though, it looks delicious.

I love coucous but i find it incredibly difficult to make. everytime i make coucous I always screw it up and fail at it :( it always ends up tasting like crap. haha but you make it seem really easy to make :) im very inspired and will try it again!

I really like a food like this that you can essentially make out of the kitchen. Excellent for fast paced days. Hen and artichokes together is an excellent collaboration.
