It was Katie’s birthday on Thursday. She has a framed piece of calligraphy above her bed made by my mom; it reads “The Queen’s Bed.” Katie has always been our little princess…and even at 23 years of age, the sign is quite apropos. Miss Katie has cerebral palsy, and is truly a success story for a young woman with a disability. She has a job, can drive (but doesn’t…whew), and can be quite independent. And when it’s Katie’s birthday, the day is ALL about her…and she wanted red velvet cake. 

If you haven’t found the perfect red velvet recipe, you can stop looking right now. The oil, the buttermilk, the cream cheese frosting…it all makes the moistest, most perfectly crumbed cake you can imagine. Hubby is the only naysayer. What else is new? It’s short about 12 pounds of chocolate for his tastes…but it’s an excellent cake despite his review

PS…the cake really is red, but since the birthday girl was anxious to get her slice, I hurried the photography.(And how could anything with 3 bottles of red food coloring not be glowing???)
