Chocolate Chip Cookie Dough Brownies~
by Liz Berg on September 8, 2011
Brownies topped with cookie dough and glazed with ganache…who could resist that combo???? I sampled quite of bit of the egg free cookie dough before layering it on top of the brownies…a weakness of mine…eating more dough than cookies. It was yummy….but being a former nurse, with a paranoia when it comes to salmonella, I never let my kids indulge in my vice. I was afraid they might not enjoy the slight granular texture of the sugars in the uncooked dough layer, but, in fact, all 3 guys liked them…hubby most of all. Brownie points for me…and for this new recipe.
Chocolate Chip Cookie Dough Brownies…adapted from
Recipe Girl
Brownie layer:
4 ounces unsweetened chocolate, chopped
1 cup butter, at room temperature
2 cups light brown sugar, packed
4 large eggs
2 teaspoons vanilla
1 cup flour
Cookie dough layer:
3/4 cup butter
3/4 cup light brown sugar, packed
3/4 cup granulated white sugar
3 Tablespoons milk
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups semi sweet chocolate chips
Ganache topping:
6 ounces of semi-sweet chocolate chips or semi sweet chocolate, chopped
1/3 cup cream
Preheat oven to 325º. Grease 9 x 13 pan and line with parchment paper lengthwise with a slight overhang on each side. Grease parchment. Set aside.
Make brownie layer. Melt chocolate in the microwave using 30 second increments, stirring until melted and smooth. Set aside. In a large mixing bowl, beat butter and brown sugar till well mixed. Beat in eggs and vanilla. Mix in melted chocolate. Stir in flour; don’t over mix. Spread into prepared pan. Bake 25-35 minutes or till toothpick inserted in center comes out clean. Cool.
Make cookie dough. With an electric mixer combine butter and both sugars. Mix in milk and vanilla; stir in flour. Add chocolate chips and mix to combine. Spread over cooled brownie layer. Cool till firm (can freeze to hurry along process).
Make ganache. Melt remaining chocolate and cream together in microwave, stopping at 30 second intervals to stir till smooth and chocolate is melted. Spread over dough layer. Chill for easier cutting. You may pull the whole batch out with the parchment to cut or just cut pieces from pan.

Lizzy… my mouth is watering. This is too much goodness. YUM! Congrats on making top 9 at Foodbuzz today for your molten lava cakes!
Nothing like two favorites stacked together-I would love one of these bars right now! Also, congrats on top 9 with the lava cakes.
Lizzy, you certainly do get brownie points for these. These look fantastic – and just seen you’re up to 110 chocolate recipes already. Wow!
Oh, my! If I make these for the grandsons visiting this weekend, I will be Baking Queen! Recipe is printing as we speak! (Mr. Rosemary won’t be too unhappy either.) So many faves in one. (May have to add nuts, though.)

I remember seeing a recipe for these using the tubed cookie dough, in some Pillsbury bake-off bcookbook. Homemade cookie dough minus the eggs is the way to go, and yours look phenomenal! Oh, and I like the sugar crunch of the cookie dough too
I think thats a strength – sampling/tasting is necessary for quality control:) Great treat, great week for you in terms of awesome sweets
Your brownies look so delicious. My weakness. I know I’d love the crunch from the sugar in the dough. I need to make this for dessert one of these nights.
First of all Congratulations on Top 9 today. Now, about these brownies…..Please tell me you mixed them with an extra special slotted spoon that whisks away all the calories and fat grams.
I definitely CANNOT resist!! This is the ultimate brownie!
No way! These look soo delicious Liz! Just the thought of chocolate cookie dough brownies brings me back to a simpler time as a kid. Thanks so much for sharing Liz, they look wonderful! Great photos too! =]

These look totally addictive! Love that ganache topping.
Looks just like the ones that my sister bakes.
Oh, this is fantastic! I am very impressed!
Ok, Lizzy, now you’ve really done it! These look like the best dessert ever!!
See, it’s recipes like this that I have to scroll quickly past the picture when a family member walks by so they won’t see it and demand that I make the brownies. They look incredible. Of course they’re going to get high marks from the family. Wow.
OMG! A deadly combo for sure. Loving loving loving the recipe
Se ven exquisitos absolutamente bien hecho, buena versión,saludos y abrazos grandes.
That is a triple like..layers after layers of yummy goodness! You totally deserved a brownie point for this.
One of my daughters in law loves cookie dough even more than cookies- I’ll have to make these for her!
Oh these sound amazing! Cookie dough is definitely a weakness of mine, so I would be all over these =)
you knowwwwwwwwww i will be making these!!!!!!! AWESOME!!!!
I have to admit to never worrying about salmonella. I’ve had food poisoning once and it was from tainted lettuce, so I just keep eating raw cookie dough and licking the beaters from making cake! Now that we get pasture-raised eggs from our CSA, there’s no stopping my raw egg consumption!
Thus, given my predilection for cookie dough, these sound amazing. I’ll bet the husband would love these, too!
I definitely could NOT resist, Lizzy! Yum Yum Yum
Cheers,
Tobias
I have a raw dough weakness too. Sometimes I prefer the dough to the actual cake/cookie/whateverimmaking.
In this case I think I’d be able to hold myself back from eating all the dough because the finished brownies look soooo good!
Must have these! And thank you! I “borrowed” a watermelon recipe from you and gave you a shout out: http://eliotseats.com/?p=5499 Hope you don’t mind.
OMG Lizzy just loaded the delicious article and I was shocked with that wonderful choco-pictures!
I’m a choco-man and with those brownies, I want to eat at your house, please!
Cheers,
Gera

These look SO good! I can’t wait to make them! I know so many people (including myself) who are nuts about cookie dough and I know these would be a huge hit. Beautiful pictures too!!
It’s a great combo! Whoever thought of making an eggless cookie dough for regular consumption is a genius! The pictures are stunning, too, Lizzy…bravo!
Cookie dough is another one of those things I have never eaten! Growing up it never even crossed my mind… I just thought you “could not” eat it!!! LOL These brownies look delicious though… they would make a great introduction to cookie dough eating!!!! LOL
OMG! [very loud groan] I would be HUGE if I lived at your house.
Love these, Lizzy.
These look scrumptious!
I’ve been trying REALLY hard to lose weight but with these brownies in front of me, I would forget about my dieting in one second. How could you stay so skinny!?!?! LOL.
This is NOT right!! It has all my favorite things…cookie dough would have to be fav!!

On Stumble, you said this is my dream brownie…I believe you might be right!!!
This would be the perfect treat for me and my husband…he loves brownies, I love cookies! Yum!
Some things are just meant to be… cookie dough and brownie make such an attractive couple!
Oh My Goodness, This looks really good!
These brownies are picture perfect! They would be so dangerous to have in my house!
you’re right! who could resist that combo? I’m like you and eat more dough than cookies!
Yowza! These look amazing!!!

Liz: I’m doing a cooking demo on Friday with the theme of “When Girls Night Out Stays In” and I’ve racked my brain on what to demo for a dessert. I think these brownies fit the bill because what girl doesn’t love chocolate brownies AND cookie dough?! I think I’ve just found my dessert
Oh, goodness! These look so rich and delicious. The ganache just puts it over the top! Thanks for sharing on Sweet Indulgences Sunday.

THANK YOU, everyone for the great response to this recipe! It’s a keeper for sure~
These look heavenly! I am paranoid too, I never eat raw cookie dough or let my kids eat it either. In fact, if I have any raw egg on my hand I wash with soap.
Oh my gosh, I’ve so gotta put this on the list of things to make. Thanks for linking it up to Sweets for a Saturday. It made the Top 5!!!

Hello! Wondering if box brownie mix would be just as good, also, would dark chocolate ganache be a good idea or would it change the whole flavor? Thanks!
A box brownie mix would certainly do in a pinch…it might be a little thicker, but not a big deal. If you’re a dark chocolate fan, go for it! Good luck…they are SO good!
I just ran across these brownies, they look absolutely decadent! I love the ganache topping!
