Peach Upside Down Cake…Secret Recipe Club~

Oooh, I was so excited!  For this month’s Secret Recipe Club, I was assigned Jo’s wonderful blog, Cairns Manor. I was already a fan of her facebook page, so I was confident I could find a delicious recipe to try. I would put it up for a vote:  Pear Upside Down Cake, Chocolate Chip Banana Bread with Cream Cheese Filling or Best Birthday Cake (a yellow layer cake with chocolate icing)?  Luckily, I asked my oldest first…and he was as intrigued as I was about the pear cake, so I made an executive decision.  Who needed those other votes?  


I had just purchased 20 pounds of Indiana peaches and their scent was filling the kitchen as they ripened.  I knew I’d have to substitute the peaches for the pears…as my favorite Bartletts were out of season.  I started by making a caramel, then pouring it into a greased cake pan.  I arranged peach slices next, then topped with a lovely, light cake batter. After baking, the cake was inverted and all that lovely caramelized sugar glazed the peach slices.


Oh, my, was this delightful…the cake was flipped onto a serving plate, and the lusciously ripe peaches topped a moist cake with a tender crumb.  Truly a winner!  And, get this…the recipe is from Cooking Light!  So a slice of this delectable dessert won’t blow your diet. Hooray!  Thanks so much, Jo…it was a pleasure to  bake from your blog.

Peach Upside Down Cake…adapted from Cooking Light/Cairns Manor~

Topping
3/4 cup sugar
1/4 cup water
3 peaches, peeled, pitted and sliced

Cake
1 1/3 cups cake flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2/3 cup sugar
3 tablespoons butter, melted
2 large egg yolks
1 teaspoon vanilla extract
1/2 cup milk
3 large egg whites

Preheat oven to 350º; spray a 9-inch round cake pan with cooking spray.

For topping, combine the water and sugar in a small saucepan over medium high heat, cook until sugar dissolves, stirring occasionally. Once sugar is dissolved, stop stirring and continue cooking for 4-5 minutes until light golden brown. Immediately pour syrup into cake pan and swirl cake pan to coat the bottom evenly. 
Arrange peach slices in pan over the syrup.

For the cake, combine flour, baking soda and salt in bowl and whisk together.

Combine melted butter, sugar, egg yolks and vanilla and whisk to combine well. Add flour mixture and milk to sugar mixture alternating between the two until combined.

Whisk egg whites in clean bowl until stiff peaks form. Gently fold the egg whites into the batter, then pour batter over the pear slices in cake pan.

Bake for 35 minutes until toothpick inserted in the center of the cake comes out clean. Allow to cool on wire rack for 5 minutes, then loosen edges of cake with a knife and invert on to serving plate. Serve either warm or at room temperature.

Drn I wished I had this last monday! My future daughterinlaw is from Kentucky and it was her birthday. Her mom makes this all the time but I only made it with pineapple. So I used a cake mix with peaches as she wanted and it all fell apart! This is perfect I will be making this for her soon she and I thank you in advance! Cant wait to eat it!

I recently made a pineapple upside down cake and wanted to make some changes. I figured I needed some caramel. I love the way you cake turned out. I’m definitely going to try the caramel approach the next time!

Wow 20lbs of peaches! Are they all ripen at the same time? LOL. It’s good that you are such a great baker that you can bake to consume them instead of simply eating them. This upside down cake is beautiful!!! Color is perfect and oh I bet the taste is scrumptious!!!

I don’t know..I followed everything exactly, and I’m a seasoned baker, so I’m pretty confident in my abilities. But I wasn’t that impressed with this recipe–actually that’s putting it mildly. The cake itself doesn’t taste terrible but the peach glaze/sauce is a big turn off, in my opinion. Maybe if it had more flavor? Or maybe it’s my peaches, though they were pretty ripe. I will admit it’s a very pretty cake though. Even my mother was critical of it, and she’s a fan of nearly everything I bake..

Oh, darn it, Lauren…I hate when that happens. It could be so many things…I can only surmise that it was your peaches…but if they had a wonderful peach flavor before you baked, I’m not sure what happened! Sorry this wasn’t a hit :(
