According to hubby, I hit a home run with these beauties. Not something I’d typically make on a week night, but I had extra bacon in the fridge and fresh green beans from our nearby produce stand. Bill ate one bundle before dinner…and then another and another. This recipe will be moved to the stack of tried and true…and I’m certain I’ll get requests for another go round of these winners.
Green Bean Bundles…adapted from AllRecipes and The Realistic Nutritionist
1 pound fresh green beans, washed and stem ends trimmed
8-10 slices of bacon, cut in half
1 tablespoon real maple syrup
1 1/2 teaspoons brown sugar
2 tablespoons butter
1/2 teaspoon garlic salt
Preheat oven to 350º.
Blanch green beans for 3-4 minutes, till beans are partially cooked. Drain and set aside.
Partially cook bacon…should be almost cooked through but still pliable. Place on paper toweling to soak up excess grease.
Take 5-6 green beans and gather together in a bundle with all stem ends facing the same direction. Wrap bacon around center of bundle and secure with toothpick. Place bundles on a baking sheet.
In a small microwave safe bowl, melt butter with maple syrup and brown sugar. Add garlic salt and stir to combine. Brush bundles with butter mixture.
Bake about 20 minute till bacon is completely cooked.

I love it. I usually cook green beans in Asian way, or just saute them with butter and salt/pepper. I’m going to try this. It’ll be fun and look forward to cooking this!
