Salmon and Tomatoes en Papillote~

This was one of the first recipes I made from Around My French Table.  At the time, I thought it was good, but nothing special.  Well, apparently getting wild New Zealand salmon and giving it an extra sprinkle of my favorite French seasoning salt, Dish D’Lish, was all it needed.

This lovely dish was made by cooking the salmon in a foil packet.  But first the fillet and some grape tomatoes were placed on a bed of basil, seasoned well with salt and pepper, sprinkled with scallions and thyme, then drizzled with olive oil.  After 10 minutes in a hot oven, the salmon was cooked to perfection, and dinner was served.  A simple, delightful entree.

*We will be in and out of town the next couple weeks with college visits and a little holiday where there will be no cell phone or Internet capabilities…gasp.  I will continue to post, but won’t be able to answer any inquiries till our return.

Lizzy, I admire your dedication to FFWD’s cause! And your NZ salmon dish looks amazing and juicy… I wonder why my Norwegian salmon didn’t look close to this?

Lizzy-so nice that you can get away for a couple weeks, and relax too…no cell phone, no electronics? Wow! that will be a nice change, disconnecting a little bit!
Love the salmon the way you made it in the foil packet. Such a quick gourmet, and so moist and delicious. Looks so pretty and appealing:D

Hey Lizzy – have a great trip. Honestly, when we get a vacation off work together, we unplug anyway. No computers and no phones. Just time together to bug the crap out of each other nonstop..lol. But it’s a good rule to follow I think even if you can get internet service :) Anyway, I’m proud of ya for giving a recipe a second try even if it wasn’t amazing the first time. Good for you girl!

This reminded me of a fish dish served en papillote in baking paper at the restaurant attached to the chef’s college I attended. When the waiter brought the plate back, the customer had eaten the paper as well…oops!

I always try to find inspiration in French recipes because they truly always do have the best and healthiest ideas. This salmon sounds wonderful, I love how light yet full of flavor the recipe is.. will have to try it one day cheers!
