Glazed Salmon with Fruit Salsa~

It was through serendipity that I’ve become friends with a lovely food blogger in town.  I’ve mentioned Kate from the blog Kate’s Kitchen before. Since meeting on line, I’ve been to one of her fabulous parties, gone out to dinner with her and her hilarious hubby, run into her around town, and enjoyed cooking some of her fabulous recipes.  She raved about this glazed salmon, and I’d been waiting for a rare rain-free evening this spring to fire up the grill.

Hubby, Bill, thoroughly enjoyed this dish…but didn’t even sample the salsa…just more for me!  Tom was off to grill dinner at one of his friend’s house, so he took a ziplock bag complete with marinade and fillet…and made sure to ask me for the recipe.  He knew his gal pals would ask about it~

Salmon with Marmalade Glaze…recipe courtesy of Kate Marvel via Simple and Delicious


3-4 8 ounce salmon fillets
1/2 cup soy
2 teaspoons Dijon mustard
1 tablespoon lemon juice
1/4 cup orange marmalade


Mix soy, mustard and lemon in a ziplock bag.  Add salmon and allow to marinate in the refrigerator for about 30 minutes.


While salmon is marinating, prepare grill.

Remove salmon from marinade and top with marmalade.  Grill over indirect heat to desired doneness.  Serve with Fruit Salsa.

Fruit Salsa…inspired by Gourmet LA 

1  cup diced pineapple
1 kiwi, chopped
1 cup chopped mango
1/2 teaspoon crushed red pepper flakes
3/4 cup diced bell peppers (I used some red, orange and yellow)
2 1/2 tablespoons champagne vinegar
4 teaspoons sugar


Combine ingredients, refrigerate to allow flavors to meld.  Serve at room temperature.

I don’t know why I’ve never thought to serve a fruit salad with salmon. I’ve only ever done that with pork tenderloin. I’ll have to try it soon!

Thank you, both! And I had to giggle about our Lambeau being well trained…she is ONLY if a bribe is involved :) Marshmallows and sweet potatoes are on the top of her list~

Lizzy-Thanks for yet, another delicious marinade for the salmon. Coincidentally, this marinade has always been a favorite for chicken wings, as well.
The fruit salsa is a perfect pairing with the salmon…love it:DDD
Lambeau is such a sweet doggie, if I lived closer to your I would love to watch her too. just like I do with my son’s and my daughter’s doggies too!

I love when a few ingredients come together in a marinade. Great idea to apply the marmalade after it comes off the grill. I need to add champagne vinegar to my shopping list so we can try your fruit salsa.

The marmalade on the salmon sounds is a stroke of genius, and that fruit salsa sounds incredible! Just yesterday I was going to make a mango salsa, and my husband talked me out of it, and told me I was wasting a perfectly good mango! I’m going to make it anyways with some chicken, and I hope he’ll give it a try! Beautiful post, Lizzy! Love the picture of your dog too :)

I can’t wait to try this glazed salmon as it looks so good. Unfortunately I would have to do a sub on the salsa because I can’t eat mango, so maybe pineapple would work?

This sounds great Lizzy. How every did you get your dog to not rip that salmon off the plate, mine wouldn’t have had such self control. I’m picking up more mangos this week there is a great sale going on right now. Hope you had a great holiday weekend.

What a great match. I like how you added pineapple because when I add mango, I wouldn’t think of pineapple! Great idea. I love champagne vinegar and I’m going to try this fruit salsa soon!

We came late to the appreciation of salmon, but having finally gotten there, this recipe is a must have on the seafood menu. Love the freshness of the salsa, and the orange marmalade is just perfect, too. Very yummy, thanks!

I actually have all these ingredients and will make this tonight. To reduce calories, the 4teaspoons of sugar will be ommited from the fruit and I am going to forgo the orange marmalade glaze.
