Sometimes the simplest recipes get the biggest raves. This is one of those recipes. You can use any chocolate chip cookie recipe and your favorite butter cream frosting. Bill and the boys couldn’t wait to sample these beauties…I only made a few cookie sandwiches and left the rest plain. I just may have to whip up another batch of butter cream!
I made a half batch of Jacques Torres’ Chocolate Chip Cookies using a tablespoon scoop instead of a quarter cup scoop to dish out the dough. I made just a half batch of the butter cream…and filled each pair of cookies with a tablespoon of this decadent, diabetic-coma inducing icing. That only made 5 sandwiches. If you want to fill the whole batch, I’d make at least a batch and a half of the icing…and maybe even a double batch…and use less than a tablespoon per sandwich. I tell ya, your family will be begging for more.

Chocolate Chip Cookies…adapted from Jacques Torres
1/2 pound (2 sticks) butter, at room temperature
3/4 cup plus 2 tablespoons sugar
1 cup plus 2 tablespoons packed brown sugar
2 eggs
1 1/2 cups plus 1 tablespoon cake flour
1 1/2 cups bread flour
3/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
1 pound semi-sweet chocolate chips or discs
Preheat oven to 350º if baking without refrigerating. Line baking sheets with parchment and set aside.
In the bowl of an electric mixer fit with the paddle attachment, cream butter and sugars. Add eggs, one at a time, mixing well after each addition. Reduce speed to low and add flours, baking powder and soda, and vanilla. Mix till well combined. Fold in chocolate pieces.
For best flavor, refrigerate overnight.
Scoop out rounded tablespoonfuls of dough onto prepared baking sheets, about 2 inches apart. Bake approximately 12 minutes, till lightly browned. Cool on baking sheets for a few minutes before removing to cooling racks.
Chocolate Butter Cream…adapted from Martha Stewart
2 cups powdered sugar
4 tablespoons (1/2 stick) melted butter
1/4 cup cocoa powder
1/4 cup heavy cream
1/2 teaspoon vanilla
Whisk together all ingredients till well combined.

You can also get Guittard chocolates at Williams-Sonoma. That’s where I’ve gotten mine. Great chocolate chip cookies sandwiches. I’ve heard great things about the Jacques Torres recipe
