Basque Potato Tortilla~

Basque Potato Tortilla….French Fridays with Dorie

I was intrigued by this frittata-like dish selected for this week’s cook along from Dorie Greenspan’s Around My French Table.  I’m pretty basic with my egg dishes…mushrooms, spinach, and cheese being about as exotic as I get.  I know…boring.  Still, this egg dish with potatoes, garlic, onion plus a hint of rosemary and cayenne sounded fabulous.  And it wasn’t slated for breakfast, but instead for lunch with a salad or as an hors d’oeuvre.

Dorie offers a few bonne idees…and they are all appealing:  onion and herb, mushroom or spinach and green onion.  I made her original recipe…and it was a keeper!!  Bill had a slice for dinner and asked if he could have it again for breakfast~

I just love all the rosemary you used in your photos. I used dried rosemary in my dish, and I loved it.

There is nothing boring about ur combis , i think they are fantastic!

And the prev one with the cutting board , super , am loving d cutting board, from did where u pick it, and the name?

I made it in the evening and ate mine cold for breakfast and then packed some in a bento. It was absolutely delicious. Yours look great!

I highly recommend the onion and herb variation. It was an easy dish and so good for a light meal or a more substantial supper.

Lizzy-I love the way your Spanish Tortilla turned out, Lora made it too, and it was amazing!
A very comforting and yummy dish, with a nice sald to go with it. Very filling.
Yours looks so beautiful, so perfect, love the photos as well!
